Heureusement, l\u2019\u00e9t\u00e9 chaud et sec a invers\u00e9 la tendance. L\u2019alternance des<br \/>journ\u00e9es ensoleill\u00e9es et des nuits fra\u00eeches, particuli\u00e8rement cette ann\u00e9e, a favoris\u00e9 une maturation d\u00e9licate et intense de nos baies. Le mois de septembre a \u00e9t\u00e9 d\u2019autant plus d\u00e9terminant qu\u2019il nous a permis de vendanger \u00e0 un stade de maturit\u00e9 optimal et donc de r\u00e9aliser des vinifications id\u00e9ales.<\/p>\n<p>Le Ch\u00e2teau Pipeau 2018, d\u2019une robe profonde et brillante, d\u00e9veloppe des ar\u00f4mes de fruits m\u00fbrs<br \/>(cassis, cerise) coupl\u00e9s \u00e0 des notes subtiles de r\u00e9glisse et de moka. Tout a commenc\u00e9 avec un mois de juin pluvieux suivi d\u2019un \u00e9t\u00e9 sec. Les conditions sanitaires ont \u00e9t\u00e9 id\u00e9ales pendant un cycle de maturation exceptionnellement long gr\u00e2ce \u00e0 un \u00e9t\u00e9 indien o\u00f9 les temp\u00e9ratures du jour et de la nuit \u00e9taient particuli\u00e8rement contrast\u00e9es. Lors des vendanges, les raisins \u00e9taient aromatiquement intenses avec beaucoup de fra\u00eecheur et les vinifications se sont id\u00e9alement d\u00e9roul\u00e9es. 2016 pr\u00e9sente des notes de myrtilles, m\u00fbres, chocolat noir et caf\u00e9 torr\u00e9fi\u00e9 avec une trame tannique suave et raffin\u00e9e. 2016 r\u00e9ussit l\u2019exploit d\u2019associer le muscle et le spirituel ; vin dense et plantureux, il exprime \u00e9galement gr\u00e2ce et finesse par son aspect frais et fondant. Le potentiel d\u2019\u00e9volution du 2016 est immense et sa notori\u00e9t\u00e9 d\u00e9fiera le temps. The palate is medium-bodied with supple tannin, well judged acidity, a little oaky at the moment but with such a smooth texture, you will not be able to resist. The palate is medium-bodied, svelte and smooth in the mouth, yes, a little oaky and obvious, but there is the fruit to back it up. This is a guilty pleasure. Septembre, puis octobre ont rivalis\u00e9 avec des records de chaleur qui ont favoris\u00e9 une \u00e9volution absolument incroyable de maturit\u00e9 et donn\u00e9 naissance \u00e0 un vin naturellement concentr\u00e9 avec une grande expression aromatique.<\/p>\n<p>Pipeau 2014 est un vin \u00e0 l\u2019esprit s\u00e9duisant dans un corps parfaitement sculpt\u00e9. Un \u00e9crin aromatique au fruit\u00e9 exceptionnel : myrtilles, framboises, m\u00fbres parsem\u00e9es de notes \u00e9pic\u00e9es et torr\u00e9fi\u00e9es. La bouche est toute en harmonie, chair sensuelle, douceur de la trame tannique et profondeur de la finale fruit\u00e9e. The palate is fleshy and ripe, a little toasty oak rounding off the corners, with a touch of dark chocolate on the finish. Easy-drinking and well crafted. La maison deviendra un ch\u00e2teau avec la construction d\u2019une premi\u00e8re tour par Georges, puis d\u2019une seconde par la g\u00e9n\u00e9ration suivante. Il s\u2019inspire du nom d\u2019une des parcelles sur la commune de Saint-Hippolyte, nomm\u00e9e \u201cPipeau\u201d, pour baptiser sa nouvelle acquisition, Ch\u00e2teau Pipeau. Le vin est \u00e0 cette \u00e9poque commercialis\u00e9 en bouteille et pour une partie en petits f\u00fbts. Pendant les ann\u00e9es de guerre, Yvonne, son \u00e9pouse a maintenu l\u2019activit\u00e9 seule et a permis de pr\u00e9server la propri\u00e9t\u00e9.
